Sparkling
Gewurztraminer Pet-Nat (Orange)
$35
This is not your typical sparkling wine and that is exactly the point. A pét-nat made from Gewürztraminer grown along the Sacramento River, this wine is tropical, exotic, and unlike anything you have had before. Six days on skins give it its pale orange color and a subtle texture that makes it endlessly drinkable. Crack this one open on a Tuesday como una chela. No occasion necessary.

Tasting notes
Pale orange in the glass with aromas of tangerine, jasmine, lychee, white tea, and passionfruit. Softly sparkling on the palate with a noticeable weight, tropical and exotic flavors, and a subtle bitter edge on the finish. Balanced acidity keeps everything fresh and lifted.
Food pairings
Carnitas tacos with pineapple and habanero salsa, or a spicy aguachile. The wine's tropical aromatics, gentle tannin, and natural effervescence hold up beautifully against bold, spicy flavors.
Composition
AVA: 100% Moctezuma Hills, Solano County
Vintage: 2025
Varietal: 100% Gewürztraminer
Cellaring
Destemmed and fermented on skins for 6 days before pressing. Bottled at approximately 25 g/L residual sugar to complete fermentation naturally in bottle. Disgorged March 2026. No SO2 added. No fining or filtration.
Harvested August 21, 2025 from the Moctezuma Hills in Solano County, sitting right along the Sacramento River. This Gewürztraminer was made as a pét-nat, bottled before fermentation fully completed so the wine could finish in bottle and develop its natural bubbles. Six days on skins gave it its pale orange hue and the gentle tannin structure that sets it apart from a typical sparkling wine. Nothing added, nothing taken away.
