Tasting notes
Deep ruby in the glass with aromas of blackcurrant, dark cherry, dried herbs, and a hint of graphite. The palate is structured with firm but polished tannins, notes of black plum, cedar, and subtle earth, finishing long with quiet elegance.
Food pairings
Carne asada, birria de res, or a slow braised beef barbacoa. The wine's structure and dark fruit hold up beautifully against rich, bold flavors.

Cellaring
Destemmed and fermented in macrobins before being pressed into neutral French oak barrels where it underwent malolactic fermentation and aged for 16 months. Filtered prior to bottling. SO2 added at bottling only at 25 ppm. No other fining agents used.
Harvested October 28, 2024 from Wheeler Vineyard in Sonoma Valley and bottled February 13, 2026. Sixteen months in neutral French oak allowed the wine to develop without imposing new oak character, letting the fruit and structure of the vineyard speak for itself. Malolactic fermentation softened the acidity and added a roundness to the mid palate that makes this wine approachable now while still having the structure to age gracefully. Minimal intervention from start to finish.
